Hi hi… & happy Sunday! I’m starting a new series.. *drumroll please*

5 MIN FAVS: And from now on.. they will be every Friday!

5 MIN FAV are my favorite quick & healthy 5 min recipes! I have sooo many (due to necessity lol.. I’m always running out the door!) & seriously, eating out all the time does not do a body good. HA

ANYWHO. I am seriously too excited for this weeks recipe!! It’s my new winter staple. I LOVE a hot dinner when I come home from freezing my ass off (Thanks NY weather.. lol) & with the theme of 5 MIN FAV.. no measuring required.

Love this recipe- especially because I watch my carbs, and in the winter, this is a great alternative to pasta!! & helps keep that summer bod allll winter, feel me?

Shredded chicken: You can buy yours frozen or not, it’s so handy to keep in the fridge!  throw it in hot bone broth (I love Kettle & Fire), on salads, lentil pasta, you name it. Or you can meal prep it- I buy mine at target (always make sure you check the ingredients & buy organic & preservative free!)

Frozen broccoli, Brussels sprouts, & greens! (or any veggie in your fridge, lol): I keep these in my fridge at ALL times.. major life savers.. but if you have fresh veggies in your fridge, use that!

Vegan Kale Basil Pesto: Any pesto in your fridge will suffice, but if I had to pick, this vegan one takes the cake!

Over a hot pan, throw all your ingredients until nice & hot. Throw in a bowl- & your hearty lil winter meal is all done!! Thank me later- it’s too good & low carb!

I’m off to go make a quick bowl (sometimes I swap pesto for tomato sauce & make it vegetarian) & then pick up some holiday decor for the apartment.. cheers!
